Beyond the pale wooden counter, another world unfolds.
The tools, arranged in perfect order, wait quietly for their turn. To create the piece she has envisioned, Yuri Inoue reaches for each one in silence, without a moment’s hesitation.
From across the counter, Yuri observes her guests—the movement of their lips and the pace at which they enjoy their drinks—as her hands begin their work.
The sushi rice is prepared beside her. Yet as we sit talking with Yuri, we can hardly tell when one of her hands reaches for the rice and begins shaping it. To watch her hands closely, we would have to stop talking to her.

You listen closely to the sound of the skin being drawn away.
It is a performance that draws your attention entirely to the knife and cutting board.
A small charcoal grill sits on the counter, where another bite is being prepared.
Listen carefully, and you can hear the oil crackle and pop. A faint grilled aroma begins to drift through the air, awakening every one of the senses.
Here lies a form of ultimate luxury that cannot be captured by sight alone—a luxury experienced through sound and scent.
Another work of art emerges from Yuri’s hands.
Its back glistens here and there beneath the light. The flesh is a delicate shade of pink. Upon it, a green jewel is placed.
With its outer covering removed, the fish is presented in its purest form.
Fine incisions open ever so slightly across its surface. Even from the other side of the counter, they make you want to lean closer and peer inside.
