Leaving behind the bustle of Roppongi, you make your way toward the restaurant. Surrounded by black walls, it is a hidden sanctuary, seemingly cut off from the outside world.

A place to experience something genuine—and to reset your senses.

Behind the pale wooden counter stands a woman with a quiet, dignified presence.

Her name is Yuri Inoue, and she is a sushi chef.

The first time you see Yuri behind the counter, it is impossible to look away from her hands—or from the works of art created by those delicate fingers.Her movements are silent and unwavering. Her concentration is sharp and refined.


“I was captivated by the immediacy that only sushi can offer.” 

Japanese cuisine, Italian cuisine, pastry—there were many paths she could have taken. The one Yuri chose was sushi. For many years, the world of sushi has been seen as a male-dominated profession. One can only imagine the determination it took for her to knock on its door.

“Can I really do this?” 

Yuri admits that there were times when she was filled with doubt and uncertainty. Yet once she took that first step and continued moving forward, something gradually became clear.

Gender was not what mattered. What mattered was her commitment to continually refining her craft.She recorded herself on video, carefully studying her posture as she shaped each piece of sushi, the movement of her arms as she sliced the fish, and even how she appeared to guests seated across the counter.

These quiet, steady efforts continue to support the chef she is today.

Sushi is an honest expression of each chef’s skill and sensibility. Even the slightest difference can completely transform the appearance and character of a single piece.

The distance between a sushi chef and the guest is remarkably intimate. Yuri is drawn to a world in which she can witness, at close range, the expressions of her guests as they taste what she has created. Above all, she values the opportunity to create that experience herself.

A sense of beauty. The spirit of omotenashi—Japanese hospitality. The changing seasons. The rice, the nori, and even the tableware. Each piece of sushi she serves carries not only her own intentions, but also the thoughts and dedication of the many producers behind its ingredients.

In the tense stillness of the room, I watched her delicate hands as she presented a piece that served almost as her calling card.

A piece of otoro—fatty tuna—beautifully marbled, lustrous, and alluring.

As Yuri sliced it from the block, it was unmistakably otoro. Yet the moment she placed it on the counter, I found myself wondering whether I was looking at gyusashi—thinly sliced raw beef.

Fine incisions had been carefully made across its surface.

“I want you to feel it melt effortlessly across your tongue.”

It was an expression of Yuri’s thoughtfulness.

She considers every detail for herself, presents each piece as a work of art, and then watches as it is lifted to the guest’s mouth. At that moment, almost every guest wears the same expression.

To witness that expression is the ultimate joy she ceaselessly pursues. It is the very essence of her work.

Yuri embraces the pleasure of learning throughout her life, continually searching for the kind of sushi that only she can create.
