This is the Gion series crafted by Jikko Cutlery, founded in 1900. The blade and handle feature a beautiful design based on white tones.
Below is a chart of the steels used in the Gion knife series. For optimal sharpness and ease of sharpening, we recommend White Steel #2 or higher for carbon steel blades, and Ginsan (Silver #3) for stainless steel blades.
